Sorghum cane can reach heights in excess of 12 feet. Two days before the festival, the cane is stripped, topped and cut from a local field. On festival day, early before sunrise, it's squeezed using a #71 Chattanooga Cane Mill. We squeeze 45 gallons of juice and cook using the batch process. The final product is approximatly 5 gallons of pure sweet sorghum, just like the sorghum your grandparents would have eaten.
